Summer Recipe: Fresh Peach Soda

Summer Recipe: Fresh Peach Soda


Fresh Peach Soda

Makes about 4 to 6 servings (enough to fill a recycled 1-liter soda bottle)
1 1/2 pound very ripe yellow peaches (about 3 large fruits)
1 tablespoon lemon juice
Pinch salt
1 cup water, plus more to fill the bottle
1/2 cup sugar, plus more to taste
1/8 teaspoon champagne yeast or baker's yeast (See Recipe Note)
Special equipment:
Food processor or blender
Fine-mesh strainer
One clean 1-liter plastic soda bottle with screw-on cap (See Recipe Note)
Peel the peaches with a vegetable peeler (or blanch them for 30 seconds in boiling water and then slip off the skins). Slice the peaches in half, remove the pit, and roughly chop the fruit into a mixing bowl. Toss with the lemon juice and salt.
Bring the water to a boil in a small saucepan on the stovetop or in the microwave. Remove from heat and add the sugar. Stir to dissolve to sugar. Once dissolved, pour the sugar water over the peaches and let this stand for 10 minutes to macerate the peaches.
Working in batches, puree the peaches with the sugar-water in the food processor or blender. Strain the puree through a fine-mesh strainer into a bowl, collecting as much juice as possible without forcing any solids through the strainer. You can also strain the juice through a flour sack towel or cheesecloth to make a soda with less sediment. You should end up with 2 to 2 1/2 cups concentrated fruit syrup. (Reserve the strained solids for topping yogurt or ice cream!)
→ At this point, you can stop, refrigerate the peach juice, and add a few tablespoons of it to a glass of sparkling water to make an easy, instant soda. To naturally carbonate the soda with yeast, proceed on!

Pour the juice into a clean 1-liter plastic soda bottle using a funnel. Top off the bottle with water, leaving about an inch and a half of head room. Give it a taste and add more lemon juice or sugar if desired. The extra sugar will dissolve on its own.
Add the yeast. Screw on the cap and shake the bottle to dissolve and distribute the yeast. Let the bottle sit at room temperature out of direct sunlight for 12 to 48 hours. Exact fermentation time will depend on the temperature in the room. Check the bottle periodically; when it feels rock-solid with very little give, it's ready.
Refrigerate overnight or for up to 2 weeks. Open very slowly over a sink to release the pressure gradually and avoid bubble-ups.

Recipe Notes:

• Soda with Other Fruit: Feel free to substitute white or yellow nectarines or white peaches for the fruit in this recipe.
• Champagne vs. Baker's Yeast: I recommend using champagne yeast over baker's yeast whenever possible. It has a crisp and clean flavor that lets the fruit shine through, whereas baker's yeast tends to make sodas taste yeasty. Not a terrible thing, and fine in a soda-craving pinch, but get some champagne yeast if you can. It's sold at any homebrew supply store and online at places like Northern Brewer or Amazon.com.
• Bottling Sodas in Glass: Sodas can also be bottled in glass or swing-top bottles, but it’s more difficult to tell when the sodas have fully carbonated. To do this safely, fill one small plastic soda bottle to use as an indicator for when the sodas have finished carbonating and then bottle the rest of the batch in glass bottles. Refrigerate all of the bottles as soon as the plastic bottle is carbonated; never leave the glass bottles at room temperature once carbonated.
• Alcohol Content: A bit of alcohol is always produced when we are using yeast to ferment beverages.  However, the quick fermentation time and small amount of yeast mean that the alcohol content of this soda is well under 1% by volume. It's natural for yeast-carbonated sodas to have a bit of a yeasty flavor; this is not an indication that it has become overly alcoholic.

Who needs Cronuts when there are WikiPearls? This new futuristic treat consists of ice cream wrapped in a flavorful protective skin. You can hold the dessert in your hand and it won't melt all over you. Is this Dippin' Dots all grown up? 
The ice cream comes in three flavors: mango ice cream with coconut skin, chocolate ice cream with hazelnut skin, and vanilla ice cream with peanut skin. Currently you can only get WikiPearls at the WikiBar in Paris.
The masterminds behind the protective membrane, Harvard professor David Edwards and French designer Francois Azambourg, say the purpose of these protective skins, or WikiCells, is to reduce waste and improve the consumer's health through vitamin-supplemented skins and portion control. One ice cream ball has only 50 calories.

Ice cream is just the beginning for WikiCells – there will soon be WikiCheese, WikiYogurt, and WikiCoffee. According to Wired, In the long-term Edwards envisions "wiki technology in the home where parents could customize the fillings and skins to make their children a package-free lunch."

Retro Recipe: Crunchy Cabbage & Ramen Noodle Salad

Craving a crunchy snack? Here's something that will satisfy that urge. "Retro Recipe: Crunchy Cabbage & Ramen Noodle Salad" will have your friends and family coming over for some crunchy lunch!

Crunchy Cabbage & Ramen Noodle Salad

Serves 4 to 6

1 (12-ounce) package rainbow slaw mix (See Recipe Note)
1/4 cup seasoned rice vinegar
2 tablespoons toasted sesame oil
2 tablespoons neutral oil, such as canola or safflower
2 teaspoons honey
1/2 teaspoon kosher salt
1 (3-ounce) package ramen noodles, crushed (discard the seasoning packet)
1/4 cup chow mien noodles
1/4 cup thinly sliced green onions, white and light green parts only
1/4 cup sliced almonds, toasted

In a large bowl combine slaw mix, vinegar, sesame oil, neutral oil, honey, and salt in a bowl and stir to combine. Refrigerate for at least one hour (or overnight) to allow flavors to mingle. 

Taste and adjust any seasonings as desired. Fold in ramen noodles, chow mein noodles, green onions, and almonds right before serving.  

Recipe Notes

  • I tested with a store-bought rainbow slaw mix consisting of broccoli, cauliflower, carrots, and cabbage. You can substitute 5 cups of chopped fresh vegetables if you prefer not to use a pre-shredded mix.

No-Bake Dessert Recipe: Peach Tarts with Ginger and Coconut


Peach Tarts with Ginger and Coconut

This recipe is adapted from the Tropical Fruit Tartlets in Practically Raw Desserts by Amber Shea Crawley
Makes 4 (4-inch) tarts
For the crust:
2/3 cup sunflower seeds
1/3 cup ground flax seeds
1/2 cup unsweetened shredded coconut
1/8 teaspoon sea salt
2/3 cup pitted dates, chopped — plus a few more if needed
2 teaspoons grated ginger
For the cream filling:
1/4 cup coconut butter
2 tablespoons non-dairy milk or water
1 teaspoon ginger juice (made by pressing grated ginger through a strainer)
For the peaches:
3-4 ripe peaches
Squeeze of lemon juice (optional)
Special equipment:
4 (4-inch) tart pans with removable bottoms
To prepare the crust, place the sunflower seeds, flax seeds, coconut, and salt in a food processor and pulse until finely ground. Add 2/3 cup dates and the ginger, and process until well combined and sticky. The mixture may look crumbly, but it should hold together when pinched between your fingers. If necessary, add more dates to get the right consistency. 
Divide the mixture between 4 tart pans and press evenly onto the bottom and up the sides. Refrigerate for at least 4 hours, or freeze for at least 2 hours. If freezing, let soften a bit before assembling.
When ready to assemble the tarts, gently remove the tart shells from their pans.
To make the cream, combine the coconut butter, milk/water, and ginger juice in a small bowl and mix with a fork until smooth. Divide the cream between the four shells and spread it evenly across the bottom.  
Thinly slice the peaches and sprinkle with lemon juice. (Lemon juice is optional, but helps to prevent discoloration of the peaches.) Arrange the peach slices on top of the cream in concentric circles. 
Serve immediately (recommended) or wrap tightly and refrigerate for up to a day (tarts will still be good but may get a bit soggy). 

Recipe Notes

  • Nut and seed substitutions: 1 cup of almonds, cashews, or other nuts of your choice can be substituted for the sunflower and flax seeds. 
  • Dates: Soft, moist varieties like Medjool or Barhi are ideal. Drier dates may require you to use a bit more than the amount called for.
  • Coconut butter: To make your own coconut butter, see this tutorial: 1 cup of unsweetened shredded coconut will yield about 1/4 cup of butter, but for best results I recommend processing at least 2 cups at a time. 
  • Sweetness: I find that the dates, coconut, and ripe summer peaches are plenty sweet, but you can top the tarts with a drizzle of honey or agave nectar for additional sweetness and shine.

Whether you're traveling with friends or family, San Diego is everyone's first choice for 4th of July celebrations. Even locals can't think of anything better than relaxing with loved ones on a long stretch of sand and watching an extraordinary show of lights in the sky. Below is a list of our favorite stretches of sand, spectacular fireworks shows around and places to watch the fireworks in San Diego.
Please note, firework displays and events are subject to change and cancellation.

San Diego

  • Annual Big Bay Boom July 4 Fireworks Show
    Location: Multiple Locations along San Diego Bay
    Time: 9:00 PM
    Take in the largest display in the county, with fireworks launched from four barges strategically placed around North San Diego Bay, they can be seen from Shelter Island, Harbor Island, the Embarcadero area and Seaport Village/Coronado Landing. Just find a place along the bay and you will not be disappointed. Music from 105.7 "The Walrus" FM radio.
  • SeaWorld San Diego
    Location:
     SeaWorld San Diego
    Time: Fireworks at 9:30 PM
    Extended fireworks show, Into the Blue, set to patriotic music. The park will stay open late until 11:00 PM.
  • Ocean Beach
    Location: Ocean Beach Pier at the end of Newport Ave.

    Spend the day picnicking, swimming in the ocean, walking and playing in the sand and shopping along Newport Ave. Then bundle up as the sun sets and pull up a blanket for a really spectacular fireworks show launched from the OB Pier.
  • Old Town 4th of July
    Location: Old Town State Historic Park
    Time: 11:30 AM to 4:00 PM
    Parade, crafts and activities of early San Diego recreate an old fashioned Independence Day celebrated on the frontier. (no fireworks)

Coronado

  • 4th of July Celebration in Coronado
    Location:
     Various Locations on Coronado
    Time: 10:00 AM - 9:00 PM
    Celebrate the 4th of July in the Crown City with a parade down Orange Avenue at 10:00 AM, a concert in Spreckels Park at 4:00 PM and fireworks over Glorietta Bay at 9:00 PM.

North County Coastal

  • San Diego County Fair 4th of July Celebration
    Location:

    Time: Starts at 9:30 AM, Fireworks at 9:00 PM
    Start off the day at the Fair with a patriotic opening ceremony at 9:30 AM, then enjoy the Hometown Heroes Parade at 7:00 PM, a concert provided by the Navy Band Southwest followed by a spectacular fireworks display.
  • La Jolla Cove 4th of July

  • Oceanside Freedom Days Parade
    Location:North on N Coast Hwy 101 from Wisconsin Ave to Civic Center Drive (just past City Hall
